Manti in Central Asian cuisines are usually larger in size. They are steamed in a multi-level metal steamer called mantovarka, mantyshnitsa (Russian terms for manti cooker), manti- kazan or manti-kaskan (manti pot). It consists of layered pans with holes that are placed over a stock pot filled with water. The ingredients needed to make Manti (Persian dumpling):
  1. Take 200 g ground beef
  2. Take 2 cups plain flour
  3. Take 1 egg
  4. Prepare 1 cup water
  5. Take 1 onion, grated
  6. Make ready to taste Salt and pepper
  7. Get 100 g shredded cheddar cheese
  8. Take For  tomato sauce
  9. Get 2 tbsp tomato paste
  10. Get 1 tbsp olive oil
  11. Get 2 tsp dried mint
  12. Get Salt and pepper
  13. Take For yogurt sauce
  14. Get 1/2 cup plain yogurt
  15. Get 1 garlic clove, grated
  16. Get 1 tsp olive oil
  17. Take Salt and chili flakes

Manti are cooked in a steamer and then topped with either butter, sour cream, or onion (or garlic) sauce. Manti recipes varies from region to region. Manti (mante) are dumplings common throughout the South Caucasus and Central Asia. Variations are made and consumed by different cultures including Armenians and Turks.

Instructions to make Manti (Persian dumpling):
  1. In a large bowl with flour, add salt.
  2. Combine the beaten egg with water and pour over the flour. Using your hand, mix the flour for few minutes.
  3. Then add olive oil and knead the dough for 5 minutes.
  4. This dough for making dumpling should be hard. Place it in a bowl, cover it with towel and leave to rest in the fridge for 1 hour.
  5. Meanwhile, make the filling. Combine grated onion with ground meat. Season with salt and pepper.
  6. Also make two sauces: the garlic yogurt sauce : in a bowl beat the plain yogurt with grated garlic, olive oil, salt and chili flakes. Set aside.
  7. For tomato sauce, heat the oil in a pan. Add tomato paste, dried mint, salt and pepper. Mix together and simmer for 2 minutes.
  8. Now, dough is ready. Cut the dough into 4 pieces. Working one piece of dough at a time. On a floured surface, roll the dough as thinly as you can.
  9. Using a cutter, cut the dough into small squares as you see in the photo.
  10. Place a little bit of the filling (meat or cheese) into the middle of the each square shape dough.
  11. And pinch the opposite corner to seal it firmly (as you see in the photos). Repeat with the rest of the dough that would be lots 
  12. Bring the salted water in a pot to a boil. Gently place 5-6 of dumpling in a time in the boiling water
  13. And cook for 10 minutes and until dumplings come to the surface of the boiling water.Take them out of the pot and let the manti cool.
  14. Place the manti in a plate, pour some yogurt sauce over it and then drizzle tomato sauce over the yogurt sauce. It is just heavenly tasty.

Manti (mante) are dumplings common throughout the South Caucasus and Central Asia. Variations are made and consumed by different cultures including Armenians and Turks. Turkish manti is a food you have to taste! The tiny homemade pastry filled with spicy ground beef, cooked in water and served with a yogurt sauce. That butter sauce on manti dumplings is a to-die-for the final touch.
