The ingredients needed to make Risotto with salmon and broccoli:
  1. Make ready 100 gr aborio rice (80-100 gr usually for one person)
  2. Get 100 gr smoked salmon
  3. Make ready 150 gr broccoli
  4. Make ready 2 spoons extra virgin olive oil
  5. Prepare Vegetable stock
  6. Make ready 1 garlic glove

While most risotto recipes involve adding a splash of white wine to the pot during the cooking. Risotto is such a quick and easy dish: the creamy rice is complemented here by the salmon and peas. Be careful not to overcook it, though, or it will be stodgy. Add the petits pois and lemon juice.

  1. Put some water to boil and cook the broccoli, (5 minutes) and set aside
  2. Add the olive oil in a pan with the garlic and let it brown.
  3. Add the rice and the vegetable stock little by little and mix continuously (low heat)
  4. After 10 minutes add the salmon and broccoli(both chopped) and continue mixing.
  5. After 10-15 minutes just check if it's cooked and let the stock evaporate.
  6. Move everything on a plate and ENJOY you food :D

Be careful not to overcook it, though, or it will be stodgy. Add the petits pois and lemon juice. Ladle in some of the remaining stock and keep stirring for a couple of minutes.
