These Creamy Baked Chicken Fajitas are a DELICIOUS twist on classic chicken fajitas. All of the best flavors from fajitas are combined into a rich cheesy mixture that the chicken bakes in to create a quick, easy, and mouth watering meal. This chicken fajita pasta is packed with all the flavors of chicken fajitas in a creamy pasta form. The chicken is first cooked in a load of fajita spices (you can use a store-bought packet or a homemade blend) until crispy and tender.

Instructions to make Creamy Fajitas:
  1. On medium heat, heat large skillet with vegetable oil, add chicken.
  2. Meanwhile, chop onion and bell pepper, add to chicken and cook over medium heat until onion and bell pepper are soft.
  3. Add can of Cream of Chicken, stir and cook over medium heat for 3 minutes.
  4. Add Cumin, stir until bubbly over medium heat, about 3 minutes.
  5. Add 1 cup of cheese, stir, turn off burner and set aside.
  6. Heat tortillas.
  7. Scoop fajita mixture, remaining cup of cheese and Siracha into tortillas and enjoy 😉
