Hey everyone, it is Drew, welcome to our recipe page. Today, we’re going to prepare a special dish, gai pad takrai (stir fried chicken with lemongrass). One of my favorites. This time, I am going to make it a little bit unique. This will be really delicious.

Gai Pad TaKrai (stir fried chicken with lemongrass) is one of the most favored of current trending foods in the world. It is appreciated by millions every day. This scrumptious noodle recipe 'Pad Thai Gai' is the real deal - a version of famous Pad Thai (only easier!) direct from Thailand. The noodles are stir-fried until they have that famous Thai sticky/chewy taste. You'll love the sweet-sour balance of flavors along with the comforting combination of chicken. Lemongrass is often used for flavouring dishes but for this Thai recipe, the takrai (lemongrass) is pounded until it becomes fine and stringy… Place fried chicken and lemongrass into a clean pot.

To begin with this recipe, we have to first prepare a few components. You can have gai pad takrai (stir fried chicken with lemongrass) using 11 ingredients and 7 steps. Here is how you cook it.

The ingredients needed to make Gai Pad TaKrai (stir fried chicken with lemongrass):
  1. Take 100 g sliced chicken thigh or breast (sliced)
  2. Get 1 stalk lemongrass (pounded and sliced)
  3. Get 2 Kaffir leaves (remove stem)
  4. Take Coriander root and stem (roughly chopped)
  5. Get 60 g straw mushrooms (quartered)
  6. Take 1 garlic (crushed and chopped)
  7. Take 1/2 onion (core removed, cut into chunks)
  8. Prepare 1 coriander stem and root (chopped roughly)
  9. Prepare 1 shallot (quartered)
  10. Take 1 Thai chilli (cut in half)
  11. Make ready 1 big chilli pepper (sliced roughly)

Gai = chicken, Sai = added, Takrai = lemongrass. Pound the lemongrass with the back of a cleaver or meat tenderizer, then slice it very thinly. Heat a little oil in a wok or skillet (we used a skillet, as shown in pictures at right) to medium high heat, add the shallots, onions, garlic, extra-fine chile. When the eggs are set, stir to incorporate the onion mixture.

Instructions to make Gai Pad TaKrai (stir fried chicken with lemongrass):
  1. Heat vegetable oil and fry chicken with garlic and Thai chilli until chicken is cooked
  2. Add half of lemongrass, coriander root, shallot to wok. Save other half for a fresh garnish once dish is prepared.
  3. Add chilli pepper and mushrooms.
  4. Deglaze with chicken stock and season with oyster sauce, soy sauce, black pepper and sugar.
  5. Add Kaffir lime leaves and take off heat.
  6. Garnish with lime juice and remaining herb/veg mix.
  7. Enjoy :)
