Return leeks to the mushroom pan with any juices. Nothing's better than a pasta you can whip up from ingredients you already have lying around. Ready in minutes, these "back-pocket pastas" are the best in our books. Meanwhile, heat oil in a large skillet over medium-high. Add sausage and mushrooms and cook, stirring often, until they begin to brown.
